CHICKEN LEGS WITH FRESH GINGER AND LIME JUICE

INGREDIENTS

  • 5 chicken legs
  • A piece of ginger, peeled and finely chopped
  • A bunch of fresh coriander, finely chopped
  • 2 limes
  • 1 onion
  • 100 ml honey balsamic vinegar
  • 1 chili pepper
  • Olive oil
  • Salt
  • Pepper

PREPARATION METHOD

Wash, clean and pat dry the chicken legs. Season with salt and pepper.Coat them with flour.

Heat some olive oil in a skillet. Add the ginger.Add the onion and the chili pepper and sauté.Add the chicken legs, turning all sides to brown.Add honey balsamic vinegar and lime juice.Reduce heat to low and simmer for 5 minutes.

Transfer everything into a baking tray. Bake in pre-heated oven at 200°C (392°F) for 20 minutes until they get glazed checking for both sides to cook well.

Serve with fresh coriander on top.
