ROCKET SALAD WITH GOJI BERRIES, AVOCADO AND OLIVE OIL

INGREDIENTS

  • 1 bunch of rocket
  • 1 bunch of baby spinach
  • 1 ripe avocado
  • 4-5 asparagus
  • 10 tomatini
  • 2 tb goji berries
  • 1 tb cranberries
  • Olive oil

PREPARATION METHOD

1.

Wash the asparagus and cut off the pithy parts.Heat some water in a non-stick skillet, add a pinch of salt and boil the asparagus just so they become al dente.

2.

Wash the rocket and the spinach and then drain well.In a large bowl add the rocket, the spinach and the tomatini cut in half.Cut the avocado in thin slices and add to the bowl.

3.

Add the berries and toss with virgin olive oil.
